Located in the heart of the city, Brunello is Canberra’s Premium Wine Bar and Restaurant offering fresh local produce and over 400 wines from all over the globe.

Monarch were engaged to construct the fit out of this new dining experience, working collaboratively with the owner to deliver his intended dream for the space.

The scope included demolition of the existing bank fit out and construction of a 120 seat fine dining restaurant including a bespoke retail wine section incorporating some of the rarest wines throughout the world. The project also included a fully refrigerated feature cheese room and state of the art viewing kitchen. The center piece of the space is the custom bar with imported marble stone, book matched on each curved section, serving as the focal point upon entry into the restaurant.

Despite program interference from harsh covid restrictions, this project was delivered on time and budget to enable the client to open their new restaurant before Christmas.

Throughout the entire project Monarch were excellent at keeping it to the timeframes and budget and we were delighted with the finished product and result. The workmanship and quality of the build has exceeded our expectations and we cannot recommend them highly enough.
